The Kiwis are OBSESSED with pumpkin! It's everywhere here, and often served as a main vegetable with restaurant meals. It's almost always the soup of the day as well!

When we moved, I brought along canned pumpkin (as it's the one thing they DON'T have here - many people cook and bake from scratch), and made pumpkin cheesecake. :)

Linsey, I've never made pumpkin bread, but I saved a recipe for a cake that a friend brought to work and made me swoon!

2 cups flour
2 tsp cinnamon
2 tsp soda
1 tsp baking powder
.5 tsp salt
2 cups sugar
.5 cup Crisco
.5 cup applesauce
4 eggs
1 can pumpkin

Sift together powdered ingredients, then mix in sugar and other ingredients. Beat 4 minutes. Bake at 350 degrees for half an hour or until center is done.

The icing is the real secret!

1 stick butter
8 ounces cream cheese, softened
1 box powdered sugar
1 tsp vanilla
Mix in blender.

I haven't baked it yet, but I will soon!

Miss Cellania, do you have a good pumpkin bread recipe (that uses canned pumpkins, as I don't have time or patience to use the real thing)?

Thanks!

I'm a cat-lover through and through, and I laughed at the video! It didn't hurt the cat and he'll probably avoid all cars in the future (and be safer to boot!)
