
I’m a big Food Network fan. I could sit on the couch and zone out to cooking shows all day. So recently, I was watching a food competition show, and a judge was telling one of the contestants they had to let their personality come out more. That got me thinking of all the television chefs I’ve ever watched, and the one who stood out the most was the the old Cajun chef, Justin Wilson. If you’ve never heard of him, take a look….I guar-ron-tee you’re in for a treat.
The prize bull and the bureaucrat.
The shallow bayou.
The squirrel hunter.
Red snapper in the Gulf.
The first southern hush puppy olympics.
Don’t dig a hole to trim a mule’s ears.

Graham Kerr, the Galloping Gourmet
and especially ‘Chef Floyd’

I grew up watching Mr. Wilson back on WYES in New Orleans, even when I was a tiny kid because he was so funny and Mom would always try to make his recipes. So I have him to blame for being funny and fat.

I shook hands with and got an autographed cookbook from Justin Wilson about 19 years ago. Belk of Savannah had brought him in for a booksigning when I worked there. He told me ‘You’re a varry pretty lady’, in that wonderful Cajun accent. A fond memory of mine…

There is some delicious irony to Justin Wilson’s cooking shows not even being produced in Louisiana… they were a product of Mississippi Educational Television (Miss. ETV). Yeah yeah, save you jokes about oxymorons… some of us grew up there. :D

I used to love it when Justin would measure things with the palm of his hand, a teaspoon or a table spoon and then when someone didn’t believe he had the correct measurement he would pour it in his palm and then deposit that into a measuring spoon to show them it was.
Remember he always wore belts and suspenders because he was a safety expert.
