He knew we were coming across the country, yet only provided 2 cake tastings. The assistant, when we asked if she had any questions that would help us in our design said, "Yeah, we don't do that here." We asked if Mike could come out and were told that he was too busy. We also were told that Mike would probably have "Some Hand" in making the cake, but not total. Did I mention that we flew across the country, and he knew we were coming? The cake is surprisingly good... not phenomenal, but good enough to keep the "It looks so good, it must taste like crap" naysayers (as I once was) at bay. That said... dude, it's cake. If you want to make a sculpture, just make a sculpture. My favorite episode "Ace of Cakes" was his flamingo "cake" for the zoo. Since they intended to keep the "cake" on permanent display, and it was too fragile anyway... he just used styrofoam and covered it in fondant. Fondant (the edible icing/covering) is not very tasty, and I'd think it would take a very dense (therefore dry) cake to stand up to the shapes they're making.
