How They Put the Centers in Chocolate

Every wonder how chocolate makers fit in all that caramel or fudgy goodness? This 1997 video from the National Film Board of Canada lets you take a look at the process. It's completely wordless, so you have to piece together a lot of the information on your own. It looks like two popular methods are using molds or completely dosing candy in liquid chocolate. The most surprising part is how the workers drizzle chocolate on top using their bare hands.
